SWAHILIAN RICE DISH 
1 1/2-2 lbs. stew meat or chicken
2 sm. cans of tomato paste
1 onion, chopped
1 bell pepper, chopped
4-6 bay leaves
5 c. cooked rice
8 oz. cooking oil

Boil meat (lightly seasoned) until done. Warm 8 ounces of cooking oil in saucepan. Add tomato paste. Cook until browned. Pour in chopped onion, green peppers, and bay leaves. Cook until onion, bay leaves and green peppers are tender. Serve over rice.
