GEORGE WASHINGTON'S FRUIT CAKE
2 c. butter
3 c. sugar
5 eggs, separated and beaten
1 c. milk
3 tsp. baking powder
4 c. flour
1 c. currants, floured
3/4 c. raisins, chopped and floured
a handful of citron, chopped and floured
cinnamon to suit
nutmeg to suit

Cream the butter and sugar in a wooden mixing bowl. Lightly stir in the separately beaten egg whites and yolks. Then blend in the milk. Sift the baking powder into the flour and stir this in. After these ingredients are mixed, stir in all the fruits and spices. Pour the batter into deep loaf pans or long shallow pans lined with well buttered papers. Fruit cake takes longer to bake than plain cake.

Bake at 275°F to 300°F for at least 2 hours. This was Washington's favorite fruit cake. His wife, Martha, made it for him. They received this recipe on the day they married from Martha's mother. In remembrance of our Constitution's 200th birthday.
