RICOTTA CAKE 
1 yellow box cake mix
2 lbs. Ricotta cheese
4 eggs, beaten
1/4 tsp. vanilla
3/4 c. sugar
Powdered sugar

Preheat oven to 350 degrees. Grease and flour 13 x 9 inch pan. Make 1 yellow cake mix as directed. Pour all raw cake mixture into bottom of pan. Thoroughly combine Ricotta, eggs, vanilla, and sugar. Pour this mixture (without mixing) over top of cake mix. Bake at 350 degrees for 1 hour. When cool, sprinkle powdered sugar over top. Cut into small pieces and serve in cup cake papers. Store in refrigerator.
