RICOTTA CAKE 
2 lbs. Ricotta cheese
3/4 c. sugar
3 eggs, lightly beaten
1 cake mix with pudding (lemon, white, chocolate, etc.)

Mix together Ricotta, sugar, and eggs. Prepare cake mix according to package directions and pour into a greased and floured 13 x 9 inch pan. Carefully spoon Ricotta mixture over batter. Bake at 350 degrees for 1 hour. Cool; sprinkle with powdered sugar. Cut into squares and serve.
