10 cucumbers, sliced 1 lg. onion, sliced 3 cloves garlic 1 green pepper, cut in strips 1/4 c. pickling salt 2 c. honey 2 c. cider vinegar 1/2 c. water 1 tsp. turmeric 4 heads fresh dill Combine cucumbers, onion, garlic, green pepper and salt; let stand in cool place several hours or overnight. Heat to boiling point the honey, vinegar, water and turmeric. Add drained cucumber mixture, bring to boiling point, pack into hot sterilized jars, add 1 head of dill to each jar. Seal, process in boiling water bath 10 minutes. Makes 4 pints. SUBSTITUTION: Honey may be used in place of sugar in your favorite recipes. Just use approximately 2/3 cup of honey to replace each cup of sugar. Also decrease the liquid slightly. Try using honey in Kool Aid or other drinks and on breakfast cereal instead of sugar. |
