SLOPPY JOES FOR A CROWD 
3 lb. ground beef
1 c. chopped onions
1 1/2 c. chopped celery
3/4 c. chopped green pepper
3/4 c. chopped mushrooms
1 tsp. cayenne pepper
1 tsp. black pepper
1 tbsp. dry mustard
2 tsp. salt
1 qt. tomato puree
1/2 c. brown sugar, firmly packed
1/4 c. vinegar
2 c. water, if needed
25 sandwich buns

Start browning beef in skillet and add onion, celery, pepper and mushrooms; cook until almost tender. Transfer to large saucepan and add remaining ingredients, stirring well. Cook until thickened, about 1 hour. Add water if mixture becomes too thick, but it should not be soupy. Spoon onto sandwich buns. Yield: 25 sandwiches.
