HELENE'S MARINARA SAUCE 
3 tbsp. olive oil
2 sm. onion, finely chopped
2 cloves minced garlic
2 lg. carrots, finely chopped
2 lg. celery stalks, finely chopped
1 can crushed tomatoes with puree
1 tsp. salt
1/4 tsp. pepper
1/4 tsp. oregano
1/2 c. red wine

Step 1: Cook onions, garlic, celery and carrots in olive oil until tender.

Step 2: Add tomatoes and spices.

Step 3: Cook 2 to 3 hours, stirring occasionally.

Step 4: Add 1/2 cup red wine during last 15 minutes of cooling.

Note: carrots and celery can be chopped in the food processor.
