BREAKFAST BIG TOP 
1 1/2 c. Gerber oatmeal
2 c. milk
1 c. flour
2 tbsp. brown sugar
2 tsp. baking powder
1 tsp. salt
3 eggs
4 tbsp. butter, melted

Combine oatmeal and milk in deep bowl; stir well and set aside until milk is absorbed. In another bowl, combine flour, brown sugar, baking powder, and salt. Add eggs to oatmeal mixture and mix. Add flour mixture and stir. Add melted butter and stir only until blended. Do not over mix. Heat lightly greased griddle over medium heat (350 degrees for electric griddle). Griddle is hot when a few droplets of water will skip along griddle. For each pancake pour a scant 1/4 cup batter onto hot griddle. Turn when bubbles appear on the surface and bottom and edges are browned. Brown other side; turn only once. Yield: 20 4 inch pancakes.
