CHICKEN SQUARES 
3 1/2 c. cooked & diced chicken
1 c. cooked rice
2 c. bread crumbs (cubed)
2 tsp. salt
1 (4 oz.) can diced pimiento
1/3 c. diced celery
4 eggs, beaten
2 c. chicken broth
1/4 tsp. poultry seasoning

GRAVY:

1/2 c. butter
1/4 c. flour
2 c. cold chicken broth
1 can drained mushrooms
1/4 tsp. paprika
1 tsp. lemon juice
1/4 c. cream
1/4 tsp. salt

Mix chicken square ingredients together lightly. Press into 9"x13" greased pan. Bake at 325 degrees. Cut into squares. Serve with Gravy.

GRAVY: Melt butter and lightly brown. Add flour and blend. Stir in remaining ingredients. Simmer until thick, stirring occasionally.
