BROCCOLI CASSEROLE 
Thawed and well drained: 2 packages frozen chopped broccoli or 1 1/2 to 2 bunches fresh broccoli, cooked, 5 minutes, in boiling water and then cut up.

3 eggs, well beaten
12 Ritz crackers, crushed (any butter cracker will do)
1 (8 oz.) jar Cheese Whiz
6 tbsp. butter
2 tbsp. flour
1/2 c. water
1/4 c. chopped onion

Saute onions in 4 tablespoons butter until soft. Stir in flour; add water. Cook over low heat until mixture thickens, and comes to a boil. Blend in Cheese Whiz. Add broccoli and eggs. Put in greased casserole (1 1/2 quart). Cover with cracker crumbs. Dot with remaining butter. Crumbled crispy bacon is good in this too. Bake at 325 degrees for 45 minutes.
