SPANISH RICE 
1 c. rice, uncooked
1 med. onion, chopped
1/2 green pepper, diced
2 c. stewed tomatoes
1 can tomato soup
1 c. water
Salt & pepper to taste
1/4 c. butter
1/2 lb. hamburger (optional)
1/2 c. Cheddar cheese (optional)

Heat 1/4 cup butter in saucepan. Add onion and green pepper and uncooked rice. Stir over high heat until lightly browned. Add tomatoes and water. Mix well. Bring to boil. Cover, lower heat and simmer 30 minutes. For variation of recipe, cook hamburger with onion and pepper until very brown. After simmering 30 minutes, pour in casserole dish and top with Cheddar cheese, if desired.
