MUSHROOM ROLL - UPS 
12-14 thin slices white bread
Softened butter
1/2 lb. mushrooms, finely chopped
2 tbsp. melted butter
1/2 tsp. curry powder
1 tbsp. lemon juice
1/2 tsp. salt
Dash pepper
Dash cayenne

Preheat oven to 425 degrees. Remove crusts from bread and roll each slice to 1/8 inch thickness with a rolling pin. Spread the surface of each slice thinly with softened butter and set aside.

Saute mushrooms until tender in the melted butter with the curry powder and lemon juice. Add salt, pepper and cayenne. Spread about 1 tablespoon of this mixture on each slice of buttered bread. Roll like a jelly roll and fasten the ends with toothpicks. Brush each roll with melted butter. Bake in oven for 10 minutes, until brown. Cut in half and serve. Makes 24-28 rolls.
