VEGETABLE CHILI CON CARNE | |
1 lb. ground beef 6 slices bacon, (diced) 1 tsp. salt 1 tbsp. chili powder 1/4 c. bacon fat 1 can (8 oz.) tomato sauce 1 lg. can pinto beans or kidney beans or both, chili beans 1 lg. can of whole tomatoes (crushed) 1 green pepper, (diced) 1 sm. can of mushrooms or fresh 1/2 lg. red onion 2 cloves of garlic 2 celery stalks, (diced) 1 c. of beef broth Brown bacon, drain some fat off. Add ground beef, brown, add onion, garlic, celery, green pepper and rest of ingredients. Simmer until vegetables are cooked. Salt and pepper to taste. I sometimes use all three beans. |
