POPEYE'S DELIGHT 
1 (9-10 oz.) pkg. frozen chopped spinach
2 tbsp. minced onion (optional)
2 beaten eggs
1/2 c. milk
1 c. shredded sharp cheese
1 (3-4 oz.) can mushrooms (optional)
1/4 tsp. salt
Dash of pepper
1/2 c. soft bread crumbs (optional)

Cook spinach briefly. Drain well. Drain mushrooms. Combine all ingredients except bread crumbs. Put in a greased casserole and top with the crumbs. Bake at 350 degrees for 1/2 hour or more, until a knife inserted in center comes out clean.
