LINGUINI WITH TOMATOES AND BASIL 
1 lb. Brie cheese, cut into 1 inch cubes
4 lg. ripe tomatoes cut into 1/2 inch cubes
1 c. clean, fresh basil leaves cut into strips
3 garlic cloves, peel and mince
3/4 c. olive oil
1/2 tsp. salt
1/2 tsp. fresh ground black pepper

Combine above ingredients in large bowl. Prepare at least 2 hours before serving time. Set aside, covered, at room temperature.

Bring to a boil 6 quarts water, 1 tablespoon olive oil and 2 teaspoons salt. Add 1 pound linguini. Boil until tender but firm, 8 to 10 minutes. Drain pasta. Immediately toss with tomato, etc. mixture.

Serve at once, passing grated Parmesan cheese (and peppermill for freshly ground pepper - optional). Serves 6-8.
