PEANUT BUTTER BREAD 
2 1/2 c. sifted flour
3/4 c. sugar
4 tsp. baking powder
1 tsp. salt
1/2 c. (about 2 oz.) salted peanuts, chopped (skin removed) (optional)

Sift together in a bowl the flour, sugar, baking powder and salt. Stir in peanuts. Make a well in center of bowl and set aside. Mix until blended:

1 egg, well beaten
1 1/2 c. milk

Blend gradually into 1 cup softened peanut butter. Add to dry ingredients all at one time; stir only until dry ingredients are moistened. Turn into pan and spread to corners. (Pan, 9 1/2" x 5 1/4" x 2 3/4" loaf pan, bottom only greased.)

Bake at 350 degrees for about 1 hour, or until a wooden pick or cake tester comes out clean when inserted in center of bread. Cool and store. Yield: 1 loaf.
