MANDARIN SNOWFLAKE DELIGHT 
1 (18 1/2 oz.) white cake mix
3 egg whites
1/2 c. vegetable oil
1 (11 oz.) can mandarin orange slices & juice

FROSTING:

1 (9 oz.) carton Cool Whip
1 med. can crushed pineapple, juice & all
1 (3 1/2 oz.) pkg. instant vanilla pudding mix
1 c. flaked coconut, separated

Combine first 4 ingredients. Mix for 2 minutes. Pour into greased 13 x 9 x 2 inch baking dish. Bake at 350 degrees for 25-30 minutes. Let cool.

For frosting mix Cool Whip, pineapple, vanilla pudding mix and 1/2 cup coconut. Spread over cake. Sprinkle remaining coconut on top.
