BLUEBERRY-ORANGE BREAD 
Peel of 2 oranges
1/2 tsp. salt
3/4 c. sugar
1 c. water
2 tbsp. melted shortening
2 eggs or 1 egg + 2 whites
2 1/2 c. flour
3 tsp. baking powder
1 1/2 c. fresh or dry pkg. frozen blueberries

Boil together the orange peel, salt, sugar and water to make thin syrup, about 20 minutes. Cool and remove peel. Measure syrup and add enough water to make 1 1/2 cups liquid. Put in mixing bowl. Add shortening and well beaten eggs. Add flour sifted with baking powder. Mix thoroughly; gently fold in blueberries.

Put into well greased 9"x5"x3" loaf pan. Bake at 350 degrees for 1 hour or until tests done. Turn out and cool on rack.

Makes 1 loaf.
