BOILED WHITE ICING 
3/4 c. sugar
1/4 c. white syrup
2 egg whites
2 tbsp. water
Pinch of salt
1/4 tsp. cream of tartar
1 tsp. vanilla

Mix all ingredients in a bowl and place over boiling water (can use double- boiler) and mix at high speed (about 7 minutes or until icing peaks) to spread on cake. Sprinkle with fresh coconut if desired.
