BLACK BEAN SOUP 
1 lb. black beans
2 qts. water
1 lg. onion (opt.)
1 green pepper, diced
1 garlic clove
1 bay leaf
1/2 c. olive oil
1 tsp. salt
For seasoning use ham, salt pork or bacon

Wash beans thoroughly and place in a deep pot, bring to a boil. Let them soak overnight in the water. Save the water for cooking. Saute onion, green pepper and garlic in olive oil. Combine all ingredients and cook over low heat until beans are tender and liquid is thick. Garnish with raw onion rings (if desired). Serves about 8.
