CLAFOUTI LIMOUSIN | |
1 1/2 lb. black cherries 4 tbsp. flour 6 tbsp. sugar 1 tbsp. dark rum 3 eggs Salt 2 c. milk 2-3 tbsp. butter Beat the eggs lightly together in a bowl. Sift the flour and blend in. Add a pinch of salt and 4 tablespoons of sugar. Heat the milk until lukewarm and gradually pour it into the egg mixture, stirring continuously. Add the rum if desired. Butter a wide shallow pan thoroughly. Put in the cherries, pour batter over them and dot with remaining butter. Bake in the center of a 425 degree oven for 25-30 minutes. |
