CRABMEAT AU GRATIN 
1 stick butter
1/2 c. flour
1 c. evaporated milk plus 1 (5 oz.) can
2 egg yolks
Salt & red pepper to taste
2 pkgs. grated cheddar cheese
1 stalk celery
1 med. onion
2 lbs. crabmeat
Paprika

In blender or food processor, put celery and onion, add 1/2 cup evaporated milk. Melt butter and add to onion mixture. Heat. Remove from fire. Blend in flour and add milk. Beat in 2 egg yolks, add seasonings and cook 5 minutes. Add crabmeat. Pour in greased casserole. Sprinkle grated cheese on top. Sprinkle paprika. Bake at 375 degrees for 30 minutes.
