CRABMEAT AU GRATIN 
1/2 c. butter
4 tbsp. flour
1/4 c. milk
1 c. light cream
1/4 c. white wine (or sherry)
1 c. grated sharp Cheddar cheese
1 tsp. salt
1/4 tsp. paprika
16 oz. canned sliced mushrooms
2 tbsp. grated onions
1 1/2 lbs. pickled crabmeat or sealegs
1/3 c. dry bread crumbs

Melt butter, stir in flour, add milk, cream and wine. Cook stirring constantly until smooth and thick. Add cheese, seasonings, mushrooms and onions. Stir until cheese melts. Fold in crab meat. Pour into greased dish. Top with bread crumbs. Bake at 350 degrees for 15-20 minutes. Serve with rice or in patty shells.
