A.J.'S SIMPLE CHICKEN CASSEROLE 
This recipe is VERY simple. Feel free to modify the ingredients to suite your own taste, because we all do not enjoy the same flavors, I personally have made 20-30 variations of this same recipe. "This is just my favorite".

2 lb. boneless skinless chicken breasts
2-3 tbsp. oil
1 (15 oz.) can peas, drained
1 (10 oz.) can cream of chicken soup
1 (10 oz.) can cream of mushroom soup
1/2 cup dairy sour cream
3 tsp. black pepper
1 tsp. salt
1 tsp. ground rosemary
1 to 2 cups crushed Ritz crackers (for topping)

Preheat oven to 375°F. Dice chicken into 3/4-inch "bite" size pieces.

In a large skillet over medium-high heat add 2-3 tablespoons of cooking oil (I use olive oil). Add chicken and cook until it is done.

In a casserole dish, combine cooked chicken and all remaining ingredients except the Ritz crackers. Stir until mixed well. Cover and place in 375°F oven and bake for 15 minutes.

Remove from oven, Cover the entire top of the casserole with the crushed Ritz crackers, Place UNCOVERED in the oven for a additional 10 minutes. Remove from oven, let cool for 5 minutes. SERVE.
