TEXAS CORN CASSEROLE 
1 stick butter
2 cans whole kernel corn, drained
1 c. cooked rice
2 sm. onions, chopped
2 jalapeno peppers, chopped
1 c. grated cheese
1 (8 oz.) carton sour cream
1 sm. jar pimento

Saute onions and pepper in butter. Combine all ingredients and pour into greased casserole dish. Bake at 325 degrees for 30 minutes.
