BUNS OR ROLLS 
3 1/2 to 4 1/2 c. flour
1/2 c. sugar
2 tsp. salt
2 pkgs. dry yeast
3/4 to 1 c. milk
4 1/2 c. water
1/2 c. or 1 stick butter
1 egg (if for rolls, add 2 eggs)

In a bowl, put 1 cup flour, sugar, salt, and yeast. In a saucepan, put milk, water, and butter. Heat over low heat until liquids are very warm, 120 to 130 degrees. butter might not melt entirely (not too hot). Pour over dry ingredients in bowl and beat for 2 minutes with electric beater. Add 1 cup flour and egg; beat for 2 more minutes at high speed and rest of flour gradually. Knead until smooth; set aside to rise for an hour or more. Knead down and let rise again until light. Make into buns or rolls. Let rise. Bake at 375 degrees for 10 to 15 minutes. makes 40 to 50 buns.
