LA QUITA (ENCHILADA CASSEROLE) 
1 1/2 lb. ground beef
1/2 env. taco flavored seasoning
1 can tomato sauce
1 lg. bag taco flavored corn chips
2 c. grated sharp Cheddar cheese
1 (12 oz.) carton sour cream
2 cans cream of mushroom soup

Brown and drain ground beef. Add taco seasoning and tomato sauce; simmer 5 minutes. Mix together cheese, sour cream and soup; let stand 10 minutes. Grease well 9 x 13 inch pan. Cover bottom of pan with crushed taco chips. Add half of cheese mixture over chips and then cover with meat mixture. Add rest of cheese mixture and top with remaining crushed taco chips. Bake at 350 degrees for 30 minutes. Let stand 10 minutes before serving.
