ORIENTAL APPLE FLOWER SALAD 
1/2 c. each sugar, vinegar
2 apples, red, unpared
3 cucumbers, unpared
1 stalk celery
Shredded lettuce

Combine sugar and vinegar. Quarter, core and thinly slice unpared apples crosswise. Pour sugar and vinegar mixture over apples. Score cucumbers with tine of fork, slice into thin circles. Slice celery on the diagonal. Add vegetables to apples. Spoon marinade over all. Marinate at least 1 hour in refrigerator. Arrange bed of shredded lettuce on plates. Drain mixture and arrange cucumbers in circle, then apple slices inside cucumber circle. Pile celery in center.
