OATMEAL CHRISTMAS COOKIES 
1/2 c. all-purpose flour
2/3 c. sugar
1/2 tsp. salt
1 c. butter, softened
2 eggs, slightly beaten
1 tsp. vanilla extract
1 c. quick cooking rolled oats
Candied citron, candied cherries and/or chopped nuts

NOTE: For the prettiest Christmas cookies, use a little of all three.

Preheat oven to 375 degrees. Sift the flour, sugar and salt into a medium size bowl; set aside.

In a large bowl, combine butter, eggs and vanilla; beat for 2 minutes or until smooth. Stir in the flour, then the oats. Drop batter by teaspoonfuls onto a greased cookie sheet, about 2" apart. Flatten each cookie with side of knife (dipping blade fir in cold water keeps it from sticking to batter). Decorate tops with bits of the citron, candied cherries, and/or nuts. Bake until cookies are golden brown around the edge, about 10 to 12 minutes. Remove from cookie sheet immediately to cool on a wire rack. Store in an air tight container. Makes about 4 dozen.
