CARROT CASSEROLE 
4 c. sliced carrots
1/2 c. ground onion
1/4 c. butter
10 crushed soda crackers
3/4 c. shredded Cheddar cheese
1/2 tsp. salt
1/8 tsp. pepper

Cook carrots until just tender. Brown onions in butter. Add carrots. Mix together cheese, crackers, salt and pepper. Place layer of carrots in buttered casserole, then layer of cheese and cracker mixture. Continue with layers until ingredients are used up, ending with layer of cheese. Bake at 350 degrees for 20 minutes.
