SALMON CAKES | |
2 1/2 c. instant (or fresh if you've got the time) mashed potatoes 1 (15 1/2 oz.) can salmon or 2 (7 oz.) cans tuna, drained & flaked 1/4 c. mayonnaise 1/4 c. chopped onions 2 lg. eggs 3 tbsp. parsley 2 tbsp. lemon juice 1/4 tsp. pepper 1/4 c. flour 2 tbsp. milk 1 1/2 c. bread crumbs Butter or oil Mash salmon and bones. Combine potatoes, salmon, 1 egg, onion, parsley, lemon juice, pepper and dash of salt. Shape into 3" patties. Beat egg and milk. Dip patties in flour, then beaten egg mixture, then crumbs. Melt 1 tablespoon butter (or use oil) and brown on medium heat 3 to 4 minutes per side. Serve with lemon wedges. |
