MINT COOKIES 
Sift together:

3 c. sifted flour
1 tsp. baking soda
1/2 tsp. salt

Cream:

1 c. butter

Gradually add:

1 c. sugar
1/2 c. packed brown sugar

Cream well. Add:

2 unbeaten eggs
1 tsp. vanilla

Beat well. Blend in the dry ingredients gradually. Mix thoroughly. Cover, chill at least 2 hours.

To shape cookies, enclose a mint wafer in about 1 tablespoon of chilled dough. This will be done by forming a ball in floured palm of hand. Then insert wafer and flattening dough to conceal wafer. Place on ungreased baking sheets about 2 inches apart. Bake at 375 degrees for 9 to 12 minutes.
