ZUCCHINI RELISH 
10 c. ground zucchini
4 c. ground onion
5 tbsp. salt
2 1/2 c. vinegar
6 c. sugar
1 tsp. nutmeg
1 tsp. dry mustard
1 tsp. turmeric
1 tsp. cornstarch
2 tsp. celery seed
1/2 tsp. pepper

Mix zucchini, onion and salt together and let set overnight. Drain off water. Mix remaining ingredients together and add zucchini, onion and salt. Cook for 30 minutes. Put in hot jars and seal. No further processing needed.
