CHICKEN AND RICE 
For each serving:

3 oz. chicken, seasoned with salt, pepper and paprika (a leg and a thigh usually equal about 3 oz.)
2 tbsp. uncooked rice
Pimento, cut up (use as desired)
1 c. water
Soy sauce (as desired)
Dried onion flakes, crumbled

Sprinkle uncooked rice in casserole, which has been sprayed with natural vegetable spray. Top with chicken. Add dried onion flakes to liquid. Pour liquid over chicken and rice. Bake at 350 degrees until chicken is tender and rice is cooked. One serving equals 3 meat exchanges and 1 bread exchange.

Variation (by using other liquids) : Use 1 cup diet cola (1 serving equals 3 meat exchanges and 1 bread exchange) or 1/2 cup orange juice and 1/2 cup water (1 serving equals 3 meat exchanges, 1 bread exchange and 1 fruit exchange).
