BARLEY CASSEROLE 
1/2 lb. butter
1 3/4 c. Pearl barley
2 onions, chopped
1 can (4 oz.) mushrooms, chopped
5 c. hot water
6 pkg. George Washington golden broth
1/2 c. toasted almonds
1/2 c. grated Cheddar cheese

Melt half of butter in skillet and brown barley, stirring constantly. Saute onion and mushrooms in remaining butter. Combine hot water and broth packages. Blend all ingredients together except nuts and cheese.

Pour into casserole and bake in a 350 degree oven for 1 1/2 hours. Sprinkle nuts on top and bake 30 minutes longer. Before serving, cover top with grated cheese and place in oven until melted.
