SAVORY BEETS | |
2/3 c. mayonnaise 1/2 tsp. prepared horseradish 1 tsp. dry mustard 1/4 tsp. salt 1/8 tsp. pepper 1/2 c. milk 3 c. hot diced beets 1 tsp. minced onion Combine mayonnaise, horseradish, mustard, salt, and pepper in top of double boiler, gradually add milk, stirring until smooth after each addition. Cook over boiling water for 5 minutes, stirring constantly. Add beets and onions, mixing carefully. Reheat 10 minutes. Do not over cook as sauce will curdle. Serve at once. Serves 6. |
