BANANA NUT BREAD 
1/2 c. shortening
1 c. sugar
2 eggs
3 ripe mashed bananas
1 tsp. salt
1/2 tsp. baking soda
1 1/2 tsp. baking powder
2 c. flour
1/2 c. buttermilk
1 tbsp. lemon juice
1/2 c. chopped nuts

Cream shortening and sugar, add eggs and mashed bananas. Sift dry ingredients together. Alternate buttermilk and flour mixture into egg mixture. Blend well. Bake in a greased and floured 9 x 5 inch bread pan or make into 4 small loaves. 350 degrees for 45 to 50 minutes for large pan. Test with toothpick to be sure done in center. This is better if it is kept a few days before eating. Ripens with age!
