BLUEBERRY BREAD 
2 c. flour
1 c. sugar
1 1/2 tsp. baking powder
1/2 tsp. baking soda
1/4 tsp. salt
2 tbsp. shortening
1 egg, beaten
1/4 c. orange juice
1 tbsp. orange or lemon rind
Boiling water
1 c. fresh or frozen thawed blueberries
1/2 c. chopped pecans or walnuts

Preheat oven to 350 degrees.

Mix dry ingredients in large bowl. Blend in shortening and egg. Add enough boiling water to orange juice and rind to equal 1 cup. Stir liquid into flour mixture. Add blueberries and nuts. Stir gently. Pour batter into greased and floured 9x5 loaf pan. Bake 350 degrees, 60 minutes.
