BEEF STROGANOFF 
1 lb. sirloin steak or tenderloin
1/2 lb. fresh mushrooms, sliced
1/2 c. minced onions
2 tbsp. butter
3-4 c. cooked noodles
1 (10 1/2 oz.) can beef consomme
2 tbsp. ketchup
1 tsp. salt
1 sm. clove garlic, minced
3 tbsp. flour
1 c. sour cream

Cut meat diagonally into very thin slices. Cook and stir mushrooms and onions in butter until onions are tender. Remove from skillet. In same skillet, brown meat lightly on both sides. Set aside 1/3 cup consomme. Stir remaining consomme, ketchup, garlic, and salt into skillet. Cover and simmer 15 minutes. Blend consomme previously set aside with flour. Stir into skillet. Add mushrooms and onions. Heat to boiling, stirring constantly. Boil 1 minute. Stir in sour cream. Heat through. Serve over noodles.
