MEXICAN COUNTRY STYLE EGGS | |
1 doz. corn tortillas 1 jar salsa (hot or medium) Or tomatoes, chile, cilantro, garlic, onions (finely chopped) 1 doz. eggs 3-4 tbsp. lard Butter to fry eggs Fried beans Grated Monterey cheese Heat lard in skillet. Fry tortilla on both sides until limp. Drain on paper towels. Put 2 on plate side by side, keep warm in oven. Fry eggs in butter over easy, slide onto each tortilla spoon warmed salsa on top of eggs. Add some beans on the side. Sprinkle all with shredded Monterey Jack lightly. |
