BLENDER CHEESECAKE 
1/2 c. boiling water
1 (3 oz.) pkg. lemon gelatin
2 tbsp. lemon juice
2 c. cottage cheese
1 tbsp. soft butter
1 c. powdered confectioners sugar
1 tsp. vanilla extract
1 graham cracker pie crust

Pour boiling water into blender container. Add gelatin and blend until dissolved. Add lemon juice and one cup cottage cheese at a time ad blend until creamy. Add butter, sugar, vanilla and blend. Pour in graham cracker crust. Chill until set. Serves 10.
