CHEESE STICKS 
3 oz. Cheddar cheese
4 oz. flour
1 pinch salt
1 pinch cayenne pepper
1 pinch mustard powder
4 oz. butter or magarine

Preheat oven to 360. Grate cheese finely. Sieve the flour, salt, cayenne pepper and mustard into a mixing bowl. Add butter (cut into 4 pieces) and rub into the flour. Stir in the grated cheese and knead together until it forms a smooth dough.

Turn out on a well floured board. Roll out thinly, with a floured rolling pin, into a long strip about 3 inches wide. Trim off uneven outside edge, cut into narrow strips about 1/4 inch apart. Form the trimmings into a ball, roll and cut into rounds with a 2 inch, plain cutter, then cut out the centers with a 1 3/4 inch plain cutter, making rings.

Place strips and rings of pastry on a baking sheet. Bake in preheated oven for 10 to 12 minutes. Cool on a wire tray.

To serve, place a few cheese sticks in each circle.
