APPLE BLOSSOM CAKE 
1 1/4 c. oil
2 c. sugar
2 eggs
1 tsp. vanilla
1 c. chopped nuts
3 c. chopped apples, peeled
3 c. flour
1/2 tsp. salt
1 1/2 tsp. baking soda
1 tsp. cinnamon
1 tsp. nutmeg

TOPPING:

1/2 c. sugar
1 tsp. cinnamon
1/2 c. chopped nuts

Combine oil, sugar, eggs, and vanilla; beat. Stir in nuts and apples. Sift together flour, salt, baking soda, cinnamon, and nutmeg. Add to other ingredients. Grease 9 x 13 inch pan. Bake at 350 degrees for 30 to 40 minutes. Mix sugar, cinnamon, and nuts together and sprinkle on top of cake before baking.
