ZUCCHINI SLAW 
2 c. coarsely shredded zucchini
2 c. coarsely shredded carrot
1/4 c. chopped green onion
1/4 c. chopped green pepper
1/4 tsp. salt
1/4 tsp. pepper
1/2 c. prepared mayonnaise
1/4 c. cider vinegar
1/4 c. sugar
1 tsp. prepared mustard
1 tbsp. fresh grated horseradish

In a large bowl, combine zucchini, carrot, green onion, green pepper and salt. Cover bowl and refrigerate for 1 hour.

Remove vegetable mixture from refrigerator. Drain well. In a small bowl beat together pepper, mayonnaise, vinegar, sugar, mustard and horseradish until well combined. Pour dressing over vegetables; toss until well mixed cover and refrigerate until serving, at least 2-4 hours for best flavor. Serves 6.

Note: When zucchini is not plentiful, try this with 2 cups of shredded cabbage. Addition of cubes of ham, chicken or cheese will make this a good lunch or supper main dish.
