4 sm. catfish, cleaned
2 c. self-rising cornmeal
1/4 tsp. black & white pepper
1 tsp. salt

When thawed out, pat dry. Dip in milk; add salt and pepper. Pour cornmeal all at one time with all the dry ingredients into a brown paper bag and shake until covered. Make sure your grease is hot and ready to fry.
