OVEN FRIED FISH 
2 egg whites
1 tbsp. olive oil
1/4 c. cornflake crumbs
1/4 c. cracker crumbs
1/4 c. Italian bread crumbs
1 lb. fish fillets
Salt, pepper, dash paprika, 1 teaspoon taco mix

Beat egg whites and oil together in a shallow dish. Mix crumbs and seasonings in a shallow dish. Dip each fish fillet first in the egg oil mixture, then in the crumbs, coating both sides. Spray a baking pan with Pam. Arrange the fillets in pan single layer. Spray fillets with Pam. Bake fish without turning until golden crisp and flakes easily. Bake uncovered.

Oven temperature 400 degrees and time approximately 30 to 40 minutes.
