OVEN FRIED FISH 
2 lb. fish fillets
1 c. sauterne or other white wine
1 tbsp. salt
1 c. toasted bread crumbs
1/3 c. oil (safflower or other lo cholesterol)
1 tbsp. fresh chopped parsley
4 lemons, quartered

Cut fillets into serving size pieces. Dip in wine. Roll in bread crumbs. Place on well oiled baking sheet. Sprinkle with oil and remaining wine. Bake at 450 degrees for about 15 minutes or until fish flakes easily. Serve sprinkled with parsley and garnished with lemon quarters.
