STUFFED CHICKEN QUARTERS 
3 tbsp. butter
2 med. zucchini (1 lb.) shredded
3 slices white bread or 1 1/2 c. croutons
1 egg, beaten
1/2 c. shredded Swiss cheese
Salt and pepper
1 (2 1/2-3 lb.) broiler-fryer, cut into quarters
2 tbsp. honey or sweet and sour sauce

1. Prepare stuffing: In 2 quart saucepan over medium heat, melt butter; add zucchini and cook until tender. Remove from heat. Into saucepan add croutons or tear bread into small pieces; stir in egg, cheese, pepper and salt.

2. Carefully loosen skin on each chicken quarter between skin and meat to form a pocket. Spoon stuffing into each pocket. Use toothpicks to help hold stuffing in place if necessary.

3. Place chicken in baking dish. Bake 40 minutes at 400 degrees. Remove from oven and brush chicken with sauce. Cook for 10 more minutes or until fork tender.
