CHICKEN CASSEROLE 
1 1/2 lb. chicken
1 1/2 c. boiling water
1 sm. onion, chopped
1 c. peas
1 c. carrots
1 c. raw rice
1/2 c. celery, chopped
1/2 c. bell pepper
Garlic (optional)
1 c. cream of mushroom soup
1/2 block butter (Pam can be substituted)
Salt and pepper to taste

Melt butter in 9x13x2 inch pan. Add vegetables, rice, water, and seasonings. Place chicken on top and spoon soup over each piece. Bake at 375 degrees for 1 hour and 15 minutes or until rice is tender and chicken is brown.
