LEMON-CHEESE SALAD 
1 reg. size box lemon gelatin
1 can crushed pineapple with juice
3 tbsp. granulated sugar
1/2 pt. whipping cream, whipped
1 c. pecans, broken
1 c. grated longhorn cheese

Heat the pineapple with juice and sugar. Mix gelatin with 1 cup hot water and the heated pineapple. Refrigerate until thickened but not fully set. Add the cheese, pecans and fold in the whipped cream. Refrigerate until set.
